Black Angus Beef Stroganoff

Ingredients
For the Soup
1 lb. Briarpatch Farm Black Angus Ground Beef
½ cup yellow onion, diced
2 cloves garlic, minced
3 tablespoons butter
3 tablespoons all-purpose flour
1½ cups beef broth
1 cup sour cream
1 (10.5 oz.) can cream of mushroom soup
Salt and freshly ground black pepper, to taste
12 oz. wide egg noodles
Fresh parsley, chopped, for garnish (optional)
Instructions
1. Cook the noodles.
Bring a large pot of salted water to a boil and prepare the egg noodles according to the package directions. Drain and set aside.
2. Brown the beef.
In a large skillet over medium-high heat, add the Briarpatch Farm Black Angus Ground Beef, diced onion, and garlic. Cook until the beef is browned and cooked through and the onion is tender. Break the beef into bite-sized crumbles as it cooks. Drain excess grease if needed.
3. Make the sauce.
Remove the beef mixture from the skillet and set aside. Reduce the heat to medium and melt the butter in the same skillet. Add the flour and whisk until the butter is absorbed and a smooth mixture forms.
4. Add the broth.
Slowly pour in the beef broth while whisking to prevent lumps. Increase the heat and bring the mixture to a gentle boil for 2–3 minutes, or until the sauce begins to thicken.
5. Make it creamy.
Reduce the heat to medium-low. Whisk in the sour cream and cream of mushroom soup until smooth and creamy. Season with salt and pepper to taste.
6. Bring it all together.
Return the Black Angus beef mixture to the skillet and stir until everything is coated in the creamy sauce. Allow it to simmer for about 5 minutes, until heated through. If the sauce becomes too thick, add a splash of beef broth.
7. Serve.
Spoon the Black Angus Beef Stroganoff over warm egg noodles and garnish with fresh parsley, if desired. Serve immediately and enjoy!
